Mellow Yellow Roasted Delicata Squash

Ingredients

  • 2 medium delicata squash, halved lengthwise and seeds removed

  • 2–3 tbsp olive oil

  • 2½ tbsp Mellow Yellow Jerk Marinating Sauce

  • 1 tsp Spanish Town Kitchen Caribbean Jerk Sea Salt, or to taste

  • 1 tbsp maple syrup

Instructions

  1. Preheat the oven:
    Preheat to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Prepare the squash:
    Slice each delicata half into ½–¾ inch thick half-moons. No need to peel—the skin becomes tender and delicious when roasted.

  3. Season:
    In a large bowl, whisk together olive oil, Mellow Yellow Jerk Marinating Sauce, Caribbean Jerk Sea Salt, and maple syrup if using. Add the squash slices and toss to coat evenly.

  4. Roast:
    Arrange the seasoned squash in a single layer on the baking sheet. Roast for 25–30 minutes, flipping once halfway through, until the squash is golden and slightly caramelized.
